CHICKEN ENCHILADAS

 

Preheat oven @ 350 degree

 

1 Large can cream of chicken soup

1 Small can cream of chicken soup

1 Large (16oz) sour cream

1 Large shredded cheddar cheese

1 Large shredded mozzarella cheese

1 Large chicken – cooked & shredded

   (Can use a precooked roasted chicken)

   Large flour tortillas

 

Mix large can of soup, shredded chicken,

¾ of sour cream, ½ of both cheeses.

Microwave 5 minutes and stir.

 

Spread ¾ of the small can of cream of chicken on

the bottom of a 9x13 pan. Put 1/3 cup of mixture

(more if needed) on tortillas & fold. Place in pan

on top of cream of chicken. Repeat until you fill

pan. Pour rest of mixture & the ¼ of small can over

tortillas. Top with remaining cheeses.

 

Bake 20-25 minutes
